...has a strict, granitic bouquet that is a little terse at first but opens nicely with aeration. The palate is crisp and tense, citric in the mouth with good tension and lovely salinity on the finish.

On the plus side, there is better volume and richness as well as a bit more mid-palate density to the middle weight flavors compared to those of the Folatières as well as a bit more overall depth and length.

Domaine Dujac in Morey Saint Denis is relatively young by the standards of Burgundy estates. It was founded in 1967 when Louis Seysses, a food manufacturer who enjoyed good food and wine, bought an existing domaine so his son Jacques could try his hand at winemaking. Jacques had already apprenticed at other Burgundy estates, and Domaine Dujac’s first vintage was 1968. Dujac wines quickly earned acclaim and today they are, in the words of Burgundy expert Clive Coates, “intense, perfumed, silky-smooth and impeccably balanced.” The domaine remains a family operation which includes roles for Jacques’ wife, two sons and a daughter-in-law. The estate is comprised of 28 acres including prime parcels in the Grand Cru vineyards Clos de la Roche and Clos Saint-Denis. There are also parcels in Charmes-Chambertin, Bonnes-Mares, Echezeaux, Chambertin and Romanee-Saint-Vivant.

Les Combettes is a 19.4-acre acre Premier Cru vineyard in the Puligny-Montrachet appellation in Burgundy’s Cote de Beaune. It is on the northern edge of the appellation and borders Meursault. Les Combettes is considered the appellation’s finest Premier Cru, and writer Clive Coates calls Les Combettes “the most complete wine” of the four Premier Cru vineyards in northern Puligny-Montrachet. Les Combettes, he writes, “is a mouthwatering and deliciously elegant combination of Meursault and Puligny, with the steeliness of the latter and the honeysuckle and hazelnut of the former.”
