Domaine Francois Carillon in Puligny-Montrachet was started in 2010 when Francois and his brother Jacques split up their father’s estate, the noted and historic Domaine Louis Carillon. Francois ended up with 16 acres of prestigious vineyards, including Grand Crus and several Premier Crus. Although Carillon makes a small amount of red Burgundy he mostly produces Chardonnay.
Les Referts is a 13.5-acre acre Premier Cru vineyard in the Puligny-Montrachet appellation in Burgundy’s Cote de Beaune. It is on the northern edge of the appellation and borders Meursault.
This white variety originated in Burgundy, but is now grown around the world. Its flexibility to thrive in many regions translates to wide flavor profile in the market. Chardonnay is commonly used in making Champagne and sparkling wines.
