The restrained and well-detailed flavors possess a sophisticated and refined mouthfeel while the stony and chiseled finish exhibiting excellent persistence on the bone-dry finish. This is class in a glass and a stunning rendition of the appellation though note well that at least moderate patience is strongly advised.

The nose has a sheen of glossy praline and almost toffee with peach and lemon-brulée notes, as well as lemon curd and mangoes. The palate has a super smooth and attractively round feel with a succulent and super slinky, utterly seductive texture. So delicious it’s crazy!

...mingling notes of crisp green apple and honeycomb with hints of oyster shell, orange oil and pastry cream. Medium to full-bodied, satiny and incisive, its ample core of fruit is girdled by bright acids, before concluding with a saline finish.

...faint passion fruit, white peach and apricot scents with aeration. Lovely definition. The palate is well balanced with a slight waxiness on the entry, and a little pithy in style. Hints of yellow plum and spices emerge toward a finish... Excellent.

Domaine Francois Raveneau

Located in Chablis, in northern Burgundy, Domaine Francois Raveneau is owned and operated by the brothers Jean-Marie and Bernard Raveneau. At 23 acres the estate is small even by local standards, though Clive Coates, for one, considers it “Chablis’ best domaine.” Harvesting is done entirely by hand and the brothers use no new oak. Raveneau’s corks are sealed with wax, which is also unusual for the region. The Premier Cru and Grand Cru Chablis produced by Raveneau are noted for their depth and dimension, and Robert M. Parker Jr. has complimented them for their great capacity to age and mature.The domaine was started in 1948 when Francois Raveneau bought vineyards to add to those already owned by his wife, who was part of the Dauvissat family. Francois began bottling his wine, an unusual practice during the 1950s and 1960s, and by the 1980s the domaine’s wines were being imported to the U.S. by California importer Kermit Lynch. Francois’ son Jean-Marie started working on the estate in 1978. Raveneau owns Grand Cru parcels in Blanchot, Bougros, Les Clos and Valmur. Coates notes that “What is impressive about the Raveneau Chablis is that (the wines) are invariably very expressive of both their terroirs and their vintages.”

Montee de Tonnerre is a 15-acre Premier Cru parcel just east of the village of Chablis and just south of the Grand Crus. Montee de Tonnerre includes the important climats of Chapelot, Les Chapelots, Pied d’Aloup and Coted de Brechain. Robert M. Parker Jr. has written that “in blind tastings, this microparcel is often judged to be a Grand Cru. It is regrettable that its reputation is not better known…” The soil is a mixture of limestone, clay and fossilized oyster shells.
