This is pushing the biological aging to the limit and in the past it would be referred to as a Fino Amontillado, a Fino on its way to becoming Amontillado... with good freshness and the chalky texture of the soils without any fatness.
Bright, with streaks of chamomile and honeysuckle leading the way for very racy dried lemon peel, fleur de sel and walnut notes. Dry, taut and bristling through the finish. Bottled October 2016.
