J. Lassalle is a 30-acre estate in Chigny-Les-Roses in Champagne. It was founded in 1942 by Jules Lassalle and today it is owned and operated by his wife, daughter and granddaughter. The estate says it has a tradition of “une femme, un espirt, un style,” or one woman, one spirit, one style. The cuvees use all three of the grapes allowed within the region, which are Chardonnay, Pinot Noir and Pinot Meunier, and all the vineyards are premier cru. Every bottle is riddled by hand, and all cuvees are aged extensively once in the bottle. J. Lassalle makes five cuvees.
